‘Pecorino’ simply means ‘of sheep’ in Italian. The Pecorino cheese is an Italian tradition, which typically has a strong romano style flavour with a firm, dry texture.
Our Pecorino is made with pure ewe’s milk and matured for a minimum of six months to ensure the development of the flavour.
Pecorino is a versatile cheese in the kitchen. It’s true friend is pasta – Pecorino finely grated over any pasta dish will bring it to life. Other options include using it as a base in pesto, blending it through a minestrone or sprinkling it over a seafood chowder.
When served at room temperature the cheese has a deep, sharp flavour. When warmed in cooking this flavour elevates again. Want a night off cooking? Our Pecorino will pair beautifully with a red wine that has a smooth finish, such as a Malbec.
The Pecorino is sold in blocks of 150 grams. Because we hand cut our cheese it’s difficult to get the weight spot on at 150 grams, so it may be over this weight, but never under. Anything extra is just a free gift from us to you.
